Ingredients

  • 1 c butter (226 g)

  • 2 c sugar (212 g)

  • 3 eggs

  • 2 t vanilla

  • 2 t cream of tartar

  • 1 t baking soda

  • 3 c flour (125g per cup)

Method

Cream sugar and butter.

Add eggs one by one, then rest of ingredients slowly.

Refrigerate 4 hours.

Work quickly with dough, not too much flour, keeping non-working dough in the freezer.

Bake for about 10 min at 375F oven.

Substitutions

  • Cream of Tartar - 3 times the amount in lemon juice or vinegar (but remember to add more flour to compensate for extra moisture)
  • Baking Soda for Powder - 1t powder equals 1/4 t baking soda
