Ingredients

  • 75 gr plain flour (sifted) (3oz)

  • 50 gr (2oz) caster sugar (2oz)

  • 425 ml milk (3/4 pint)

  • 3 large eggs

  • 3 drops of vanilla extract

  • 1 pinch of salt

  • 2 T cinnamon and sugar for plums

  • 2 T unsalted butter

  • 450 gr ripe plums, any varieties, stones removed, quartered (1 lb)

  • 1 T icing sugar (sifted)

Method

preheat oven, 220C/425F

  1. whisk the sifted flour ,sugar, eggs, milk, vanilla extract and pinch of salt together, leave to rest for 30 minutes
  2. butter a round ovenproof dish 25cm(10 inch)
  3. pour the batter into the dish, spread the plums, dust with sugar and cinnamon
  4. bake for 25-30 minutes
  5. after a few minutes out of the oven, the pudding will sink a bit but this will not spoil the taste, dust with icing sugar
