Ingredients

  • 600 g potatoes

  • 6 oz skimmed milk

  • 300 g cabbage

  • 2 t butter

  • 2 leek(s)

  • salt

Method

peel and boil potatoes

mash potatoes when tender with milk and salt (~ 1/2 t) to taste

meanwhile braise thinly sliced leeks in 1 t butter for 5 min on med high

add cabbage, braise until lost about 1/2 its size (10 min)

mix cabbage and leeks with potatoes, add pepper and salt if needed

head non-stick pan with 1 t butter, when hot add mixture in 4 even balls and push down.

fry for about 10 min a side on med-low temp, looking for a very brown texture
