• 4 medium baking potatoes

  • 1/4 c chopped onions (or chives)

  • 1 c sour cream

  • 1/2 t pepper

  • 1/2 t salt

  • 4 slices bacon (streaky)

  • 4 T Parmesan cheese

  • 2 T butter

You can can prepare ahead and even freeze these for a few months.


  1. prick with a knife and bake the potatoes in a 400F oven for approximately 1 hour
  2. fry the bacon until crispy
  3. saute onions until soft
  4. cut cooled, but warm potatoes in half
  5. scoop out insides with a spoon, protecting the skins
  6. place skins in baking dish
  7. mash potatoes with butter, sour cream, crumbled bacon and onions
  8. fry potato mash until warmed through (about 15 min)
  9. put mash mix back in the potato skins
  10. sprinkle Parmesan over the top (some paprika as well is traditional)
  11. dot with extra butter if desired

bake in 350F oven for 30 minutes
