Ingredients

  • 1/2 medium cabbage

  • 125g butter

  • 60ml malt vinegar

  • 170g Demerara sugar

Best red cabbage recipe I have had.

Method

  1. Finely slice the cabbage and place in an oven-proof pan.
  2. Pour over the vinegar, sugar and butter and mix well.
  3. Place on the heat and allow to come to the boil.
  4. Cover with a sheet of greaseproof paper and bake in the oven at 180c for approximately 45 minutes - the cabbage should be cooked but still have a bit of bite.
  5. Remove from oven, taste and alter seasoning if necessary.
